Mardi Gras Cupcakes

1 (16-ounce) box white cake mix
Green food coloring
1/4 teaspoon peppermint extract (optional)
Purple food coloring
4 1/2 cups, light frozen whipped topping, thawed
Yellow food coloring

PREHEAT OVEN TO 375 DEGREES.

  1. Line medium muffin tin with paper liners. Set aside.
  2. Prepare cake mix according to box directions.
  3. Pour half of the batter into medium size bowl.
  4. Carefully stir in 9 drops of green food coloring.
  5. In other half of the batter stir in 9 drops of yellow food coloring.
  6. In each muffin, alternate spoonfuls of green batter and yellow batter, filling the baking cups 3/4 full.
  7. Bake according to directions on box.
  8. Remove from oven and cool completely.
  9. Divide two thirds of whipped topping between 2 small bowls. Add 2 drops of green food coloring to 1/3 of whipped topping.
  10. Add 2 drops of purple food coloring to 1/3 whipped topping. Stir gently to combine.
  11. Frost cupcakes with purple, green, or yellow whipped cream as desired.
  12. Refrigerate.
