8 slices bacon, cut into small pieces
2 tablespoons minced green onion
4 medium potatoes, peeled and grated (about 3 cups)
1/4 teaspoon salt
1 cup shredded Swiss cheese
Dash pepper
1 egg
Parsley sprigs
- Cook bacon until crisp in electric skillet at 350 degrees. Drain on paper towels, reserve drippings.
- In a bowl, combine potatoes, cheese, egg, onion, salt, pepper, and bacon.
- Using 1/3 cup of mixture per patty, press into 3-inch patties and fry in bacon drippings at 350 degrees 8 to 10 minutes until browned on each side. Garnish with parsley.
Serves 4.
