Irish Bread

3 cups all-purpose flour
1 cup raisins
2 tablespoons baking powder
1 1/4 cup milk
1/2 teaspoon salt
2 large eggs
1/4 cup shortening
1 tablespoon white vinegar
1/4 cup butter or margarine
1/2 cup sugar

PREHEAT OVEN TO 350 DEGREES.

  1. Combine flour, baking powder, salt, and sugar in a bowl.
  2. Cut shortening and butter into flour mixture with a pastry blender or fork until mixture is crumbly. Stir in raisins.
  3. Whisk together milk, eggs, and vinegar; add to flour mixture, stirring just until moistened.
  4. Pour batter into a greased 10 1/2-inch cast-iron skillet.
  5. Bake at 350 degrees for 35 to 40 minutes.
    Makes 1 (10 1/2-inch) round.

Note: Bread may also be baked into 2 greased 8-inch round cakepans for 30 to 35 minutes.
