1 (16-ounce) box white cake mix
Green food coloring
1/4 teaspoon peppermint extract (optional)
Purple food coloring
4 1/2 cups, light frozen whipped topping, thawed
Yellow food coloring
PREHEAT OVEN TO 375 DEGREES.
- Line medium muffin tin with paper liners. Set aside.
- Prepare cake mix according to box directions.
- Pour half of the batter into medium size bowl.
- Carefully stir in 9 drops of green food coloring.
- In other half of the batter stir in 9 drops of yellow food coloring.
- In each muffin, alternate spoonfuls of green batter and yellow batter, filling the baking cups 3/4 full.
- Bake according to directions on box.
- Remove from oven and cool completely.
- Divide two thirds of whipped topping between 2 small bowls. Add 2 drops of green food coloring to 1/3 of whipped topping.
- Add 2 drops of purple food coloring to 1/3 whipped topping. Stir gently to combine.
- Frost cupcakes with purple, green, or yellow whipped cream as desired.
- Refrigerate.
