After an adult or teenager chops the mixture in a food processor, the youngsters will be eager to get their hands “dirty” rolling the balls.
1 (12-ounce) package pitted prunes 1/4 cup graham cracker crumbs
1 (8-ounce) package chopped dates 1 teaspoon grated orange rind
1 (6-ounce) package dried apricots 1/2 teaspoon grated lemon rind
1/2 cup ground pecans 2/3 cups sugar
- Position knife blade in food processor bowl; add prunes, dates, and apricots. Process 1 minute or until finely chopped, stopping to scrape down sides as needed.
- Transfer to a large bowl; add pecans, graham cracker crumbs, and rinds, mixing well.
- Cover and chill 2 hours. Shape into 3/4-inch balls and roll in sugar.
- Cover and chill 1 hour.
Yields 5 ½ dozen.
